Hi Mark,
I agree this would be a useful function to add to the Formula tools (as well as other standard hashing functions).
In the interim, getting these functions via R is fairly straightforward. There's a discussion here - https://community.alteryx.com/t5/Data-Preparation-Blending/Twitter-API-Signature-SHA1/td-p/15428 - that references an example of hashing/encoding within R.
