On the day I run workflows, I am able to see the results [run time, any errors, when a workflow was uploaded, etc.] However, when I go to server on a day I haven't ran a workflow or a day after I have ran a workflow, I no longer am able to see those results. The only results it will show is historic errors, which is not very helpful. This is quite frustrating as I don't have confirmation workflows ran unless I have emails set up either in events or an email tool from reporting. Is there any way or work around for it to display all results always?

Did you configure your error logs folder? If not, try from Options/User Settings/Edit User Settings/Defaults and provide logging directory.... Server will write the output of the status to this folder. I hope this helps.
Please remember you should do extra work after that to load the log files and process for your investigation.

This is probably a configuration in your server system settings. I'm almost sure of it because, for some reason, this configuration does not erase errors.
This is only accessible from the machine where alteryx server is installed, so you will need to request your server admin to reconfigure these settings. It is probably checked and with 0. I would recommend keeping the results for 6 months to a year, but that really depends on your company compliance and use cases, of course.
