Hello! Would someone mind confirming exactly what "End of Support" means? An each server version an "End of Support" date is listed. If you still have that version what exactly will happen? Alteryx Support will no longer help you? The server version is retired and no longer usable? Thank you!

Hi @AltAddict26 in my understanding that means that you no longer can ask for support of that version with Alteryx after that specific date.
That's more of a way to encourage you to upgrade your environment to the latest release. The software doesn't stop working after this date. But I know they do remove old versions from the downloads portal so you don't download unsupported versions.

Just to add a little more on from what @Thableaus has said:
This is very similar to when Alteryx ended support of windows 7 (https://help.alteryx.com/20213/designer/end-support-windows-7-and-windows-server-2008😞
As shown in the bottom part, any issues will have to replicated in a more up-to-date version to be investigated by Alteryx. It does not necessarily mean that Alteryx will not work on this version, just that any bugs are expected by Alteryx to be likely a result of the operating system.
Its the same with the version of server - Given that server is updated once a quarter, i would imagine that after a period of time any bugs raised have already been fixed in the newer versions - and so an update of server will fix them.
