User input in the Alteryx server which will be used in the workflow

Hi,
Will it be possible to create a functionality where users in the server can edit  (by a dropdown list) an Excel file that is used later on in the workflow?

We have this kind of data in the mentioned Excel:

We need to create 3 inputs/dropdowns for the user.

The first drop-down "Category" will define the second drop-down "Sub Category". They should work as dependent filters.
For example:
We have categories Region, Country and Company
Sub Categories like: Europe, Americas, Asia, Germany, Italy, China, Japan, US, A, B, C, D.

If someone selects "Region" in the Category then in the second dropdown - "Sub category" we should see: Europe, Americas and Asia.
And if that person decides to change Asia to Africa, then it will modify only that field, and the rest should stay the same.

I know that we need to use Drop Down/Tex Box and Action tool. But what's the correct way to create dependent drop downs? 
Could you please help with this scenario?
