Did some datetime parsing and lots of conditional formula (whether starting day and ending day falls on weekend or not) to plus/minus to get the exact number of weekdays.

My solution looks fairly similar to others however I didnt like how the table at the end wasnt sorted in date order so I did some extra work to address that.
