I searched and I searched, but my instance of Alteryx install (2024.2 Non-Admin) doesn't have the Tool Icons folder (was going to paste the full path but Alteryx won't let me - boo!)
After a long discussion with Chat GPT - I discovered all my tools are saved in one folder (I think) with their UUID as the file name (again, I think?). Supposedly, there's options to use APIs to make a list of UUIDs and tool names, etc. That was beyond me today, so I just created my own Tool Icons folder on my desktop with the images saved with their tool names. Fortunately, I had already mostly done this for another project. Still, this probably took me way too long. Per my usual.
