Is there a way to submit a JSON query and ONLY pull one field/column? I'm using the _source/ [ ] function, not receiving any errors, but the query returns every column available. I've also tried "Include" and "exclude", but it always pulls every column.

Each API is unique and has its own settings. You need to understand the documentation of the one that you are using. Then you can implement the correct parameters in the call to get what you need.
