Formatting table within PDF output

I am trying to format table columns to be more user friendly within a PDF output file.  I am using the basic table tool to build the table, but can't seem to figure out how to adjust the column widths.  Below is a screenshot of my output.  Can anyone advise how I can adjust the columns within the table?  Also, is there a way to format the column headers to be centered?
