Assistance with adding a new column to a template file for prior day activity

I'm trying to build out a workflow that take the attached template file and updates it by adding an additional column to summarize prior day activity.  There are 3 input files that are used to update the template file on a daily basis.  How can I build out a workflow that would take these 3 input files and updates the corresponding template file with the column name being the prior date similar to the examples provided?  Also, note that in the input files, the labels only show if activity was recorded for that day, so the values in the input need to be mapped to the corresponding correct field name in the template when outputting the updated file.  It looked like maybe a blob can help with this, but I'm not sure of the ideal solution.

Not the best solution here, but it's working. Also will handle if you add more rows as I am not outputting on a specific range for each dataset. Here are the results after 2 runs:

Formatting will be preserved for the fort rows and columns but not propagated.

I think I follow what you're asking. I've attached a workflow, which - due to the need to have sub-headers as lines in the table - is a bit long. This is the output, so let me know if it's not what you're trying to achieve.
