Threw a Union Tool in my solution.  I realize the way this data computes it wouldn't be necessary in order to match the solution (since any records that don't have an adjoining flavor/viscosity won't average out to a Score of 5); but if the data changed, it could...  And the challenge asked for any Sauces that met that rating, not just those with flavor/viscosity data.

Anyway, another fun one.
