for Juliette's date : I used 

 

DateTimeAdd([Stephane],5-toNumber(DateTimeFormat([Stephane],"%w")),"days")

 

%w returns day number. 0-sunday, 1-monday, 2-tuesday, 3-wednesday, 4-thursday, 5-friday, 6-saturday.

I subtracted 5 from the returned day number (in this case 5-2), which gave me 3 days from the stephane's birth date for juliette.
