I believe mine is a lengthy solution or workflow, but was a fun challenge.

This one was fun, but I had to review another solution to even understand the question. Good focus on date tools.

My solution is a bit cumbersome but it works. I think I can save more tools if I can use the Formula tool more extensively.

Here's my solution.

I believe this solution would work for any dataset because the weekend days are being filtered out for further configuration, but if there was a constraint on when the order date came in as well, that would change some things.
