Im glad to see Im not the only one who went this route:

Through this exercise, I learned that in the select tool, there's something called "Description" and if you are not using it, just a heads up, it is adding to your file size outcome in bytes!

Great practice, cool to see how others did it! Especially in one formula!

The solution is:

First drag the text to columns and delimit them with"- " then trim the columns from their specific fields with the trim formula  trim([Column,"delimiter"). And then bring date time tool and convert the date to alteryx format. And then rename the fields
