Here's my solution, I'll need to look up better ways of dealing with dates.

Just looking at others there was no need to pad the date for example turning 1/1/2018 into 01/01/2018, it's probably because I was getting errors as I was setting the datetime tool to UK and not US format dates!

Attached is my solution. There are some new Alteryx users on my team. I am going to add this to their list of useful challenges to introduce them to the Generate Rows tool and possibly some of the Transform tools.
