convert code to actual text

what is the best formula to use to convert codes to actual text; example;  A = Excellent, B = Average, F = Fail, etc.? within Alteryx

If you click on select column you will get add column which creates a new column

i do have that populated with     EEO_CLASS

Maybe it comes from another field you create in your Formula tool ?
