PDF to Text for scanned in documents

Does anyone have good experience using the PDF to Text tool w/ scanned-in low quality pdfs? Have some recurring refund checks we receive and I'm looking to scan the remits in and extract a few fields into a table format. The fields on check are always in same place and check formatting does not change.

Hi Alex. I successfully improve image quality of a PDF using the processing tool but I do not find a way to then use the pdf to text tool on the processed image (only takes pdf as an input).

@RemyL I don't understand the question - based on your description, that would work. You can also look at the Image to Text tool.

But instead of piggy backing on this thread, I would also start a new thread since it's a different question.
