I have a Excel file I want to sort via multiple factors. I was wondering is there a way to take the multiple sorts and make it into one output excel file where each sort is a new sheet.

I would use Block Until Done tool to avoid error in writing to the second sheet.
The attached workflow assumes the output file does not exist before running.
If it exists, you need to change the option in Output Data tool.
