After inputting the file in Alteryx, Alteryx assumes that my first header row will be the field name. Is there a way for my fields to be [Period], [Natural rubber], and [Saw Logs]. Thank you!

Hey,
At the Input Data tool config, you can actually specify starting from which row that you want to import the data.
However, looking at your Excel, you will need to do a little beyond just this setting so that we will be able to populate the header properly for subsequent analysis.
The idea is to split the data into multiple chunk, clean it separately then piece them back together.
You can take a look at the attached workflow on how I handle different row of headers separately.
And this is how the output data looks like:
