Date Data Type Changes

I have string data, what is the best way to handle converting data types to dates when some of the records are empty? With the goal of having the most efficient set of data and a functioning date data type? I am leaning towards Date Time due to it not creating conversion errors, however there are many columns.

@drslatier use the multi-field tool, select the fields you want to change to Date data type
