I have come across a number of use cases within our customers that use Alteryx to analyze data generated by other applications, one example would be parsing access logs - of course, the challenge here is that we won't get too many detailed customers stories here given the nature of the underlying data, any potential findings, etc. What I did find, perhaps you might find this useful, is a blog post related to identifying Security vulnerabilities, from the lens of an HR perspective.
