My solution below - really fun challenge, completed with only 5 tools one of which was probably unnecessary

I made use of the Developer tools:
1. create the list of required fields and the concatenated field names
2. first Dynamic Rename adds a tag of "Select" to the description meta data of the required fields
3. second Dynamic Rename changes the field names of the required fields using the concatenated names
4. Dynamic Select then just selects the fields that have "Select" as their description (meta data)
