is there anyway I can allow a user to input a number through interface to replace an existing value in the imported data set?

Ofcourse, this would be an analytic app, and you would want to use the numeric interface tool to allow for this selection. 

Interface tools can connect to most tools in a workflow, to replace existing values.

the only numeric interface tool there is "numeric up down", is this only tool I can use?

For numerici nput, we can use Numeric Up Down or Text Box.
If you have preset values we can use the Drop Down tool, I think.

you can use pre-set values from dropdown but numeric up-down is the easiest way. There are on config settings that allow you to dictate min/max, decimals, default number etc.
