IF Formula with LEFT function built in

Probably an easy answer, but I need to separate out a field (N264) using the left function, but then take that result and essentially say if "DOP" then "250", otherwise "170".

This was my Excel formula

=IF(LEFT(N264,3)="DOP",250,IF($AF264=FALSE,'I&M Input'!$B$10," "))

It seems that your formula is referring another sheet. If you could provide that one and a sample output.

Anyway, lets start with a simple one.

Do you need the output to be in String or Numeric format for further processing downstream?

If you need Numeric format, @Qiu has given you the Alteryx formula equivalent. If you need String, just need to put the numbers in inverted commas.
