Adding commas around dates

I have my date feeding in as mm-dd-yyyy as a v-string and need to add inverted commas around it.

When I do the below though, it trims the date field. Anyone know why? Is there an alternative to add the commas?

Below is date format before adding commas mm/dd/yyyy and then the formula shows how Alteryx is trimming the field.
