I am assuming there is a simpler way than to use a macro, but I get the same answer.

This was simplest to use the Generate Rows tool. Its a great way to create rows between two days. then by generating the rows you could apply the weekday function and give weekdays a value of 1 and weekends 0; then sum the weekdays by Pay Period.
