I think I stuck with the original question and assumed that a salad or soup was not a side as defined in the spreadsheet. This gave a very low % rather than the solutions 70+%

My solution is very straight forward:

 - Filter date;

 - Count types per ticket;

 - Create a column with a boolean logic;

 - Sum, count it and calculate the percentage.
