My solution - I originally had the date at the start of the week as 'Week of', which makes more sense to me, and in reality I would probably leave the nulls rather than converting them to 0s in this context.

My first take on solution is attached.  I've been successful in analyzing workflows by writing out steps in English and then finding ways to streamline.  However, I just did this one quick while I was waiting for my cube to finish.    

I agree that the issue with the crosstab changing the column name by adding spaces is disappointing.  However, I'm enjoying the tool very much.

Always fun with some real life cases

I challenged myself and added a few more steps to circumvent the Cross tab header rename bug. It made the workflow a bit less slick though.
