I used a different approach with two different data streams, generating rows for all days inbetween start and end, checking if they are weekdays (=1) or not (=0) and summarize all, putting the streams together by record id set on start.

Sharing my solution.
It is really sad that it is much more complicated than it should. There should be some user friendly functions that would allow to make calculations in seconds instead I needed to create a workaround.
I saw that people posted solutions that are simpler and faster but still it looks like in this case Alteryx don't have some basics functionality to provide the answer easily.
Great challenge! Learned a lot, maybe my solution has a lot of steps but I think it works. Left my results sorted by date. My solution attached.
