I solved two ways. One that will only work if the incoming data doesn't change (i.e., no new countries or food items are added), and one that WILL work if incoming data changes.
Two ways - one absolutely avoid the obvious transpose -> crosstab solution and the second using the Crew macro to do this with no fuss.
Super helpful - and love that several people built this into a macro! My solution with my table:
