Initially a cross tab was used to put the name as the column header and the date of birth as the data entries within the column. To calculate the DOBs and the days of the week formula tools were used, mainly utilising DateTimeAdd to get the job done. 
Transpose was used to group the data under a name column and a date of birth one before a select tool was used to tidy the data up.

Fun challenge!

For the most part I solved this in a single formula tool and then the rest was just cleaning the data into the right frame to match the answer.
