I tried to make mine somewhat dynamic, in case we had a much larger/more complex list of employees.
For a large list of employees, it would be more efficient to do the Cartesian product on employees x holidays rather than employees x all days (as I did here). We'd just need to make sure we don't drop employees who either didn't have any holidays in their region (or didn't match to an available holiday list).
I know I could have just counted the results from the report output, but this was an opportunity to bring out this crazy-but-useful formula from @jdunkerley79 (which I learned about from a previous weekly challenge!)
