Another good reshaping challenge! I always have my production hat on, so I tried to make this as dynamic as possible (it will calculate the difference between the last/first available month in the dataset and it could handle new PLUs).

 

I feel like I haven't developed an elegant way to handle crosstab column names that contain special characters (e.g. %), because non-word characters get converted to underscores. In this case, you know that the underscore is always a % (so you could just use dynamic rename and replace "_" with "%").
