Replaced quotes and paretheses, changed the format of the date, and selected certain columns to show.

Converted Dates and used Text to Column tool

parsed out with texted to columns, renamed columns, used formulas to get rid of quotes, reformatted in date/time, and renamed with a select tool.

used text to column, text to column, and date conversion... with some selects.

Round about way to get to the solution using a couple of tools multiple times.

Put in text-to-column tool first to parse out the data. Then used the formula tool to replace both kinds of quotation marks. Then converted the date using the DateTime tool to convert the format. Used the Select tool throughout the remove the old columns and rename new columns.
