I decided to use the Text-to-Column and Formula tools because they are more intuitive. Maybe in the future I'll try using the RegEx tool to optimize the parsing. 

Fun challenge!

Completed the task the long way but learned a better way to do the same.

Instead of using the Formula tool to trim the quotes, I use the text to columns to split the quotes from text and then deselected the quotes. Using the Trim function seems to easier and efficient too.
