My solution involved the Text to columns tool followed by the DateTime tool custom string 'dd-Mon-yy'

Working out the formula to format the date properly was the biggest struggle for me on this one. Other than that not bad.

I found the parse date-time tool using a custom date including the single quotes: 'dd-Mon-yy' made it really easy.
