I wasted ~15 minutes trying to set up the rows and columns manually building it like how I would in Excel ... but then with the Alteryx Tools I realised that step was wasted and I could've just done everything in Alteryx from the beginning ho ho ho.

Used two Sample tools to tidy up the data and extract just the rows we want.
Dynamic Input tool to rename the headers.
A Select tool to set the data type of the weekly rate.

Combo of Summation tool and the Cross-tab tool to calculate the weekly rates by age and seasons.

Final Select tool to tidy up the data.

So it seems that the biggest challenge was dynamically renaming the fields after the workflow.

Please see in the pictures below how I lined up the three dynamic rename tools in my workflow to re-name the fields as simply as possible for myself.
