Good Morning,

I am attempting to find documentation on the MongoDB accounts used on Alteryx Server with an embedded copy of MongoDB.  Is the MongoDB non-admin USER account read-only?

yes

Username is user - pick the non admin password in the server system settings.

https://help.alteryx.com/current/server/server-usage-report - a set of workflows that are built by alteryx against MongoDb - I would advise your start with using that. and then from there customize it to your own needs.
