I'm using Alteryx Server with SQL Server. This way, I'm not using embedded MongoDB engine database but it remains installed in Windows.
Is it possible to safely uninstall Mongo DB?

you probably can --- but your company is paying $$$$$ for Server.
Yep, agreed with @apathetichell. If it's shut down, then it's probably right to remove... but it would be having little impact. If it's running, it might be needed. I wouldn't remove it personally.
rereading this -- see my key disclaimer of 'ask your sales rep' somehow was ommitted here... you should get clarity from your sales rep prior to removing.
After some digging, it seems since I'm using SQL Server instead of MongoDB, there is no service or program labelled "MongoDB". There is no need to uninstall anything after all 😀
