Is alteryx server core based? If it is, just how many cores does it need for the initial server installation, and also how do we scale it up.
Sorry if it is a bit vague as I also have small understanding about this.

When you say is it 'core-based' I'm assuming you are talking licensing cost- in which case you should reach out to your Alteryx account rep.
According to the Server documentation (http://downloads.alteryx.com/Documentation/Alteryx%20Server%20Installation%20Guide.pdf) You'll want at least a 4-core / 16GB RAM machine with 1TB of disk.

So lets say I want to scale up and add more server (meaning an additional core).
Do I need to buy another server license?

You are allowed to use up to 4 cores with the Server license.
If you want to use more cores, you have to pay extra for them. Check with your Aleryx sales rep and they'll let you know the cost.
