Hi I've never done this before and I guessed how it would work. Below will be my setup and error I am recieving.

Your action tool is probably updating the field name EMAIL and not the content of the expression. Select the place where you see the expression, highlight in blue, and then down below enable Replace specific string, delete the quotes and leave just the dummy email.
