Are you looking specifically for the log files generated during normal operations? Typically, you'll find this under ProgramData\Alteryx\Service (with a rotating log file)
Alternatively, you can use Alteryx to connect to your MongoDB instance via the MongoDB tool (Connectors palette) and retrieve information regarding Users, Subscriptions, Jobs, Apps, Sessions and Results.
