There's really not a lot of polynomial interpolative functionality in Alteryx out of the box as far as I know. There is spline using Multivariate adaptive regression in the predictive toolkit, which you may want to look into. If you're looking for specifically for 3rd degree interpolation, I would recommend doing it in R and then use Alteryx as a wrapper to execute.
