What version of Alteryx Designer are you using? Stacked bar chart functionality was added in 2019.1.

Here's the instructions from the Insight tool documentation:

https://help.alteryx.com/current/Insight.htm

To create a stacked bar chart:

1. Run the workflow.
2. Click Configure Chart in the tool configuration window.
3. Under Create > Layer, click Add Layer.
4. Select the chart Type of Bar.
5. Select columns to use as the values for the X and Y axes.
6. Under Create > Transforms, click Split.
7. Select the column to split the data on.
8. Under Style > Layer, select Stack from Bar Mode.

Hi Charlie:

Thanks so much for the confirmation. I am using the 2018 version which apparently does not support creating stacked bar charts. I will keep your 2019 instructions to use when we move to the 2019 version.
