How many rows does Alteryx scan to determine the data type of a field coming in?

Do you mean during the Auto Field tool process? if that's what you're referring to, the documentation says it reads all of the records:

https://help.alteryx.com/current/designer/auto-field-tool 

Use Auto Field to read through all of the records of an input and set the field type to the smallest possible size relative to the data contained within the column.

Besides the process of the field being assigned, the field types should already be assigned by the source of the field. If you have a particular scenario where the field types assignment isn't working as expected, then post some details and we'll see what we can figure out together.
