Alteryx Output Logs to track total number of transactions for multiple users & workflows

We need to gather, track and report on the total number of transactions processed via Alteryx Designer by multiple users and multiple workflows.  Some of the workflows are on the server and some are not.  We know that the workflow output logs contain information on number of records read which is what we are going after.  We know that the output logs can be generated via the Event Email feature and we know that the output log is saved to each individual users C drive.  The issues with these options are:

1) Event Email  - need to develop a process to parse out only the number of records read from the body of the email for hundreds of emails.  We are exploring the Outlook Input tools but we need to get the API established which is several weeks down the road.  

2) Output logs saved to each individual users C drive or another lan drive - not everyone has access to the same lan drives 

Has anyone done this or something similar?  If yes, very much interested in learning how.  Very much open to ideas so please share! Thank you!
