Add additional heading to a table then merge few columns (that are not static) - need help

Hi, 

 

There is a workflow with 3 Fruit columns ("Number of Apples", "Number of Mangoes" and "Number of Gauva") that are not static. That is, if Raj has any Gauva with him then only that column will be generated in the table, otherwise not. (typical summarize and cross tab in Alteryx).

 

At one instance:

At another instance (number of columns changed as per data)

Now, what I need is that a new heading is created, where "Fruit" is the heading after merging all (apples, mangoes, gauva) columns.

How do I do this? I went through some similar posts but the main difference here is that these Fruit columns are not static.
