I made a quick sample for Step 1 and 2 and of course you can do something about the column name.I tried to be more dynamic so adding or removing columns will not be an issue.

Run Total Sum - Plant 1 Run total of (Sum all plants- plant1)Status 1 IF Run total of (Sum all plants - plant1) > Plant 1 then "High" else "Low" End

like
if i add Plant 4 then it should show status 4 the same way if I add new columns I need to get new status
