Which tool I can I use, if I want to overwrite the text in SAP Document?

I installed ACS - SAP Read Tool, which tool i can use if i want to extract SAP FI documents (GL) and re-edit the header text or text or long text, and write the data back into SAP FI?

You might want to spend some time on the DVW Analytics web site since they seem to be the leaders in Alteryx SAP integration.  

According to a 2020 post, acs_support@dvwsolutions.com is the support email for DVW, but I don't know if this is still current

do you have a specific variant/t-code you are looking for - you can use the Report read tool to read from ECC and other sources which are in your config/setup - you cannot write using a read tool. You have to license the Write tools separately.  As noted by @danilang talk to DVW - they will help you figure out how to do what you are trying to do.
