Is there maybe anyway we can use the results of the Summarize tool, which provides me with a list of unique names in a column, then in the same workflow I would like to reference that list of unique names to be used as a filter so that I can then separate all rows of data with each unique name?

Thank You again you are correct, that workflow did export to three different tabs, which is great!
I don't yet understand how you set up the Formula tool to generate that result.
Also, now I can not figure out how to keep those three different data sets in my workflow to continue manipulation before exporting.
For example, before exporting to excel, I may need to subtotal the CANDY values and/or count the number of TOM's and or maybe both subtotal and count for each unique ID.

I am not sure if you really need to split those into 3 different data sets.
I would keep it as one and I would do my best to perform the analysis on whole data set at once.
I have added information on how to add one line for the subtotal and how to add unique count value.
If you will explain me one by one what do you actually need we can look into it together and propose optimal solution.
