Strange character when sending email using scheduler/server but not when running manually

Hi all, I need some help. I have an workflow where I create multiple emails and them I send out to my users every day, and I have 50 countries with all different languages that you can image and I am facing a very strange issue with non Latim languages when sending the emails, but only when I schedule the workflow to run during the night... because when I run the workflow manually I get the email as should be.

Inside the email I have a table with some information as you can see below:

This is the table and the correct info, that I get when I run the same workflow manually:

But if I try to send the same email during the night using the scheduler to run all the same workflows I will get this:

 

I really don't know how to solve this, and how can work when I ran and not when the server runs.

Any ideas how to solve this?
